Grocery shopping Sunday's.

Today I was blessed to be invited to a coworker and friend's daughter's 16th birthday party. After my work shift I drove down to Clement Park, it was BEAUTIFUL. It felt amazing to get outside after a long day inside. It has been full on Summertime in Colorado and I have been LOVING every minute. I was able to take a photo that doesn't do any justice for how beautiful it was. Grateful to continue to find new gorgeous places. My love for the mountains grow everyday. I hope you all had a blessed and quiet Sunday. Gearing up for Monday morning with a Natural Grocers run, food prep, a workout, some laundry, and a bit of blogging. My grocery list this week is listed below:
Purple sweet potatoes
Avocados
Red Onion
Corn Tortillas
Cabbage
Vegan Blue Cheese- I didn't realize how many vegan options there really are out there! And on top of vegan, they are all organic products! I have been having fun with this new grocery adventure.
Cauliflower- I have been inspired by Leaf Cafe in Boulder to make buffalo cauliflower tacos. Hence the corn tortillas and vegan blue cheese. I completely forgot buffalo sauce so that will be a trip for another day. I will be making them and posting them on my recipe page!
Bananas- cut a couple up and put them in the freezer for smoothies and banana ice cream
Vegan Cheese- best kind I have found yet Miyoko's Creamery is the brand, it is organic and there are multiple flavor options. I was so excited to try that it was the first thing I dug into when I got home. It is textured very similarly to a block of smooth cheese. I found my vegan cheese!
Protein filled & Pumpkin seed crackers- great with my new cheese, as well as crumbled up on my salads for some crunch.
Carrots
Protein filled, dairy free Waffles (with honey on top, yum!)
Dried Black beans (which I will be posting about once I make them! I have never made beans dried before, but I have heard they are great for you and taste even better!)
